Can you use Adblock Plus to block Google Analytics? How would I do that?

Yes it can, I suggest you subscribe to the "ABP Tracking Filter"

http://adblockplus.org/en/subscriptions

It will block "Google Analytics" and a heap of other similar sort of things.

If you just want to block google analytics, simply add this filter:
